Homemade Hot Pockets

This recipe makes 4 large homemade hot pockets.  Pretty quick and easy recipe; nice to throw together on a night when you don't really feel like cooking.



Pizza Pockets

Dough
1 C really warm water
1 tsp. maple syrup or honey
1 T yeast
1 tsp. salt
1 T olive oil
1 1/2 C whole wheat flour
1 C white whole wheat flour


Filling
Pepperoni
1 C Tomato paste
1 tsp. Italian Seasoning
Italian cheese, shredded

Prepare dough by dissolving the yeast in the warm water. Allow this mixture to sit for 1 minute. Then, add in the syrup/honey, salt and olive oil. Using your mixer, mix in the flour. Knead for 5 minutes until smooth. Allow the dough to rest for 5 minutes while you prepare the filling ingredients.


Mix the Italian seasonings into the tomato paste.  Season to taste, I think I ended up with a little more than the recipe called for.

Separate the dough into 4 equal pieces.  Roll out on a floured surface into a rectangle.  Spread tomato paste all over the dough.  Add cheese and pepperoni on only half of the dough.  Wet your finger and rub the edges of the dough so that they will stock together.  Fold it over and use a fork to seal it.  Repeat for each pocket.

Bake at 200C (400F) for 18 minutes.

If you have leftover tomato paste use it as a dipping sauce.
